I entered my “Lemon Filling With Marshmallow Poofs” recipe in the weekly Iron Chef challenge hosted this week by Lemons For Lulu!
Ignore the ugly marshmallow frosting top! That’s what earned it the “Ugly Duckling” title. This pie has a Rice Krispy treat crust, the most amazing lemon pie filling ever, and ugly frosting that should have never happened.
Rachie Recipe: “Lemon Filling With Marshmallow Poofs” :
1 package lemon Jell-O
1 package vanilla pudding
2 cups boiling water
2 cups milk
1 tbs lemon juice
15 large marshmallows
Place the Jello-O mix and the marshmallows in a mixing bowl and add the boiling water. Stir so all of the Jell-O mix is dissolved. The marshmallows will get gooey and melt a bit – this is the awesome part! Set the bowl aside and DON’T put it in the fridge. Give it about 10-15 minutes to cool and mix the vanilla pudding with the milk in a separate bowl. Stir for 2 minutes and mix in the lemon juice. Add the pudding mixture to the Jell-O mixture and stir it all together. It will be an opaque liquid with gooey partially melted marshmallows floating on top. Pour it into your pie crust and let it set overnight in the fridge.
